Moskito Island is seeking to fill the position of Chef de Partie.

Responsible For:

Maintaining the highest level of cleanliness in the kitchen operation.
Key Objectives:
This includes but is not limited to:  
  • Operate kitchen equipment/machinery and maintain a hygienic work environment in accordance with health regulations and company standards.
  • Carry out duties as required in supporting the operation’s needs including the cleanliness and hygiene of the kitchen.
  • Perform daily duties and complete cleaning schedules.
  • Assist Chefs as and when necessary.
Detailed Responsibilities:
  • Prepare breakfast fruit and juices, toasts, and assist in general food preparation.
  • Assist in the preparation of staff lunch and events when needed.
  • Wash and dry and put away all the pots and pans, china, glassware, cutlery and kitchen equipment.
  • Sweep and mop kitchen floor after each shift or as required due to spills and accidents.
  • Clean the kitchen preparation surfaces, cook areas and storage areas on a daily basis per the cleaning schedules.
  • Follow all other guidelines and instructions per the cleaning schedules.
  • Remove rubbish / garbage from the kitchen to designated storage and disposal areas at set times a day.
  • Ensure that the kitchen is kept clean, hygienic and safe at all times per food safety and hygiene standards
  • Help unload and store food deliveries as required.
  • Assist the Chef in plating the food during service, if required.
  • Use the kitchen machinery and equipment in a safe, responsible manner and in accordance with manufacturer’s guidelines.
  • Drive designated kitchen transport in a safe and responsible manner, as required. You will need to hold a valid BVI drivers’ licence.
Other Duties  
  • Ensure that all control procedures are followed and enforced, and that all statutory requirements are followed.
  • Have a clear working knowledge of the Island’s policies and operate within them at all times.
  • Attend meetings as required and to support the communication process.
  • Co-operate with the management and other workers to ensure a harmonious working atmosphere.
  • Ensure that all standards are adhered to for guest satisfaction set by the company, through vigilance and attention to detail.
  • Respond to emergencies including fire & accident as stated in the fire procedures.
  • Any problems with other members of staff must be reported according the grievance procedure available.
  • Take care of all equipment, ensuring that it is operated in the correct, safe & efficient manner.
  • Ensure duties are carried on Moskito Island and any assigned location in the BVI in relation to the business as per the rota assigned which may include evening schedules.
  • Have a clear working knowledge of the island’s policies and operate within them and to ensure staff awareness of all policies.
  • Ensure that all control procedures are followed and enforced, and that al statutory requirements are understood and followed.
  • Co-operate with management and other workers and to ensure a harmonious working and living atmosphere.
  • Attend meetings as required and to support the communication process.
  • Carry out any other duties as reasonable request made by management.
  • Behave in appropriate manner as a representative of the company when off island.
  • You shall not, during the course of your employment or thereafter, disclose to any person any confidential information relating to the business dealings of the Company, guests or employees or any other matters that may come to your knowledge by reason of your employment.
  • Be well groomed and representable in uniform (provided by the company) when on duty.
  • Be willing to allow flexibility to work extended hours when needed including evenings, weekends and public holidays.
  • Be willing to carry out your duties on Moskito Island and any other designated location in the BVI.
